From the kitchen of Sara Bosscher
Makes: 12-15ish muffins
Ingredients:
- 2 eggs
- 1 c. canned pumpkin
- 1/4 c. vegetable oil
- 1/4 c. applesauce (or another ¼ c. oil)
- 1-1/2 c. flour
- scant 1 c. white sugar
- 1 t. baking soda
- 1 t. baking powder
- 1/4-1/2 t. salt
- 1/2 t. ground cinnamon
- 1/4 t. ground nutmeg
- 1 c. chocolate chips
Steps:
- Preheat oven to 375 degrees. Line muffin tin with paper liners or spray.
- In large bowl beat wet ingredients well with an electric mixer.
- In another bowl combine dry ingredients (except chocolate chips). Gradually mix the dry into the wet with mixer.
- Fold in chocolate chips and spoon into muffin cups, a little more than ¾ full.
- Bake 20-25 minutes until tops are springy (my oven does 23 minutes). Cool on wire rack.
