Sugar-Dusted Blueberry Muffins
A Recipie

(Makes 6-8)
Ingredients
- 1/4 cup quick oats
- 1/4 cup orange juice
- 4 tablespoons butter, melted
- 1 egg
- a heaping 1/4 cup to a scant 1/2 cup of sugar (depending on your tastes, I do somewhere in between)
- 3/4 cup flour
- 1/2 teaspoon baking powder
- 1/8 teaspoon baking soda
- 1/4 teaspoon salt
- large 1/2 cup blueberries
- 1 tablespoon sugar + 1/8 t. cinnamon
Steps
- Preheat oven to 400 degrees
- Mix oats and oj. Let it sit for 5 minutes.
- Beat in egg and sugar.
- Toss in rest of ingredients except blueberries, stir until moistened. It should be a bit lumpy.
- Fold in blueberries. If you use frozen blueberries, run them under the faucet in a strainer for a few minutes to break them up and soften them a little.
- Place paper liners or cooking spray in muffin tin. Spoon in batter, 1/2-3/4 full.
- Sprinkle the sugar/cinnamon mixture on top of each.
- Bake for 18-22 minutes and turn out immediately onto a towel or wire rack to cool.
